Marathon PR

Today was the Honolulu Marathon.  And I set a PR.  I slept through (well) over 50% of the finishers finishes.    And I slept longer than the last place person took to finish I think...(they are still out on the course...13+ hours after the start).


I slept about 20 hours last night because I was sick last week.  I knew it was coming on.  But there was little I could do.  I blamed my vitamin "C" diet.  That consisted of carrot juice and coffee for about 3 days.  Turns out carrot juice and coffee doesn't have much vitamin C.


But that diet was a lot better than my diet of coffee, string cheese and jelly beans from earlier in the week.  This week of school kicked my butt.  Because not only was I trying to wrap up the current class, I was trying to play catch up on the three papers/classes I was overdue on.  I was successful in everything.  Including catching the crud.  I blame it on a week of class in a musty room with no outdoor air circulation and 29 other students.  And working at the mall.


I started working at Magnolia.  Magnolia is an antique and olive oil boutique owned by friend and SUPER swimmer Maggie.  Her son had a bad skate board accident and she needed help covering some shifts.  I thought it sounded fun.  And it is.  Mostly because people that come into the store and ask my name immediately think I'm Maggie.  She's a couple inches taller, quite a few pounds thinner, and about :30/100 faster in the water.  When she's doing backstroke (and I'm swimming free).  But I'll take compliments where ever I can get them right now.

I was so busy last week I forgot to eat most of the food I bought previously.  So in an attempt to use fruit before it goes bad I made up a few recipes.  One of them rocked.

Apple Cranberry Crunch

Peel (or don't) five apples and core/slice them.  Layer them in the bottom of a 9 x 11 pan.  Take a cup of fresh cranberries and coarsely blend with 1/2 C water.  Layer that on top of the apples.  Combine 1 C of oats (I love Coaches Oats), 1/2 C of flour of your choice (I used Bob's Multi Purpose Gluten Free Flour Mix), 1/2 C of agave and mix well.  Put that on top of the cranberries.  Sprinkle with nutmeg and cinnamon.  Pour a little more agave on top. Then sprinkle another 1/4 C of oats on top.  Bake for 30 minutes.  So good.  Seriously tastes like the one my mom makes even without the brown sugar or butter.

The Apple Cranberry Crunch completed my winter weekend in Hawaii.  Seriously.  December is the best time to live in Hawaii.  It rains every day.  The nights are cool cold and the days warm.  And there are rainbows (usually double) every day.

Holy cow, I could stare at the rainbows all day long! I'll have to try your recipe once I get to my parent's house. Mainly because it will be deemed to healthy and I get it all to myself. :)

What do you mean Coffee doesn't have vitamin C?? I thought that's what the C stood for!! ;) Hope you start feelin better soon!

Oh, I haven't missed any of your blog updates. It says a lot about you, that you will take a compliment whenever you can get them. You seem like a fun girl, but obviously like everyone have moments where everything isn't as good as you like.

I'll add you back to my list. I like all kinds of people, but I think I am probably more like you than most of the people I read.
